Good King Henry use as a vegetable has been underrated for years. It can be used like spinach (young leaves) or even asparagus (forced leaves). Also known as Lincolnshire Spinach and Poor-mans Asparagus. Keep harvesting to retain young softer growth for salads and steam/ sauté slightly older leaves.
