Amaranth 'Red Aztec' grows striking red leaves and pink stems, with a nutty flavour.  It may be used as a baby leaf salad for micro production of salad leaves.  Older leaves may be used like spinach.  Seeds can be used as grains and was used as such as a staple food of the Aztecs. High in fibre and more protein than rice. May be used as a cut and come again herb.
