Chicory has beautiful blue aster like flowers.  The leaves are edible with a slightly bitter flavour.  The edible flowers add an attractive finish to a dish.  Use the roots harvested in the winter for a coffee substitute.  The high inulin content is good for diabetics. A terrific addition to a wildlife garden as an attractant for pollinators.
