Good King Henry can be used as a vegetable has been under-rated for years.  It has green shield shaped leaves and can be used like spinach (young leaves) or even asparagus (forced leaves). Prefers sun, but is shade tolerant and prefers free-draining fertile soils. Also known as Lincolnshire Spinach and Poor-mans Asparagus.  Keep harvesting to retain young softer growth for salads and steam/ sauté slightly older leaves.
